Roast Leg of Lamb with Mint and Garlic
For use with French Roasting Spices Recipe:

1 five-pound leg of lamb, trimmed
2 cloves of garlic, sliced
2 tbsp Aromatica French Roasting Spices
Lemon juice
10 mint leaves
Salt to taste

Preheat oven to slow 300°

Cut 10 small slits in the lamb and insert garlic slices, wrapped in mint leaves.

Rub leg of lamb with roasting spices, lemon juice.

Place the meat on a rack in a roasting pan and roast uncovered, 18 minutes per pound for well done (175° on a meat thermometer), 12 minutes per pound for rare (140°).

When done transfer the lamb to a warm serving tray and let stand for 20 minutes before carving.  Serve with pan gravy, roasted potatoes or white bean casserole and tossed green salad.
