Broiled Herbed Chicken For use with California Herb Grill: 2 2-pound chickens quartered 1/4 olive oil 1/4 cup cooking sherry (wine) 2 tbsp Aromatica California Herb Grill Salt (optional) 4 tbsp crushed garlic In a bowl whisk together the olive oil, 1/2 of the cooking sherry, spices, garlic. Turn on broiler. Place chicken on broiler pan and baste both sides of the chicken with basting marinade. Before cooking make sure skin side is down then place pan in broiler on second level from top and cook for 20 minutes. Then remove pan and turn chicken over. With a spoon sprinkle the rest of the cooking sherry over the top and cook until done, about 20 minutes. |
