All-American Prime Rib For use with Prime Rib and Beef Seasoning: 1 prime rib or beef roast, 7 bone size 4 tbsp Aromatica Prime Rib and Beef Seasoning 2 tbsp crushed peppercorns 3 tbsp olive oil 4 tbsp fresh minced garlic (optional) The day prior to roasting, rub prime rib with olive oil, covering completely. Then apply Aromatica Prime Rib and Beef Seasoning using enough to coat the entire roast, return to refrigerator. On day of cooking remove from refrigerator and let stand at room temperature. Add minced garlic, crushed peppercorns. Preheat oven to 500° or the highest it will go. Insert meat thermometer into the thickest part of the roast making sure it does not touch a bone. Place the meat fat side up, rib side down in the roasting pan. During the cooking process additional spices can be sprinkled over the meat if more spice flavor is desired. After 15 minutes on 500°, reduce the heat to 350°. To calculate cooking time, allow 15 minutes per pound for rare, 20 minutes per pound for medium. Roast in the oven until the thermometer registers 120° for rare or 135° for medium. Remove from oven and let rest at least 15 minutes before carving. To carve, take a knife, cut the strings which attach the meat to the bones and remove the meat from the bones and remove the meat from the bones. Then, using a sharp carving knife, slice the meat across the roast, making the slices about 1/2 inch thick. |
